Production

The grapes, harvested in crates, are processed immediately. The red grapes are pressed immediately to extract the core of the berry, while the white grapes undergo a 12-24 hour cold maceration at low temperatures (5-8°C). This process enhances the primary aromas, giving the bottle intense and defined aromas, without excessive color extraction or astringency.

This is followed by fermentation at a controlled temperature of 16°C and aging in steel for 5-6 months, which gives balance, elegance and persistence.
