Sofai 2018 – Born Beneath the Beech Trees
“Sofai” means “beneath the beech trees”.
Years ago, farmers would rest there during long summer days while oxen recovered in the shade. Today, those same hills of Soffaino are home to the vineyards that produce this organic red wine from Lake Garda.
When we first heard that story, we realised Sofai was more than a wine.
It carries memory inside it.
Slow Winemaking, Done Properly
Groppello, Marzemino and Rebo grapes are hand-harvested in small crates and carefully selected.
Part of the harvest is naturally dried for weeks, slowly losing around 30% of its weight. This traditional appassimento process concentrates aromas, texture and depth.
After fermentation, the wine rests for twelve months in second-passage French oak barrels.
Not too much oak.
Not too much intervention.
Just enough to add complexity while preserving the identity of the grapes and the freshness of the territory.
Tasting Notes
Colour: deep ruby red with bright reflections.
Nose: forest berries, blackberry jam, raspberries, spices and delicate cocoa notes.
Palate: structured yet elegant, with smooth tannins, savoury balance and a long harmonious finish.
A wine with presence — but never heaviness.
