Mid-October. While most of the Valpolicella vineyards have already finished harvesting, the Carpanè vineyard is still waiting. Not out of laziness, but by choice. Because the Corvina from Lake Garda here only reaches full maturity after the others have already bottled.
And when we tasted this Carpanè Corvina Veronese IGT , we understood that the wait was worth every day.
The philosophy of "different"
You know those producers who try to make wines that everyone will like? Well, this isn't one of them. Carpanè's philosophy is clear: to enhance the terroir's "irregularities," those nuances that vary from hill to hill, rather than flattening them to create a standardized product.
The result? A Veronese red wine that stands out from the area's more usual standards. It doesn't seek easy approval, it seeks authenticity. And when we tasted it, we sensed exactly that: a wine unafraid to be itself.
The process that makes the difference
After the late manual harvest—the one in mid-October, when the bunches have concentrated everything: aromas, structure, character—something special happens. The grapes undergo a natural over-ripening process for about 30 days in the drying room .
It's not a mandatory step. Many producers skip it to save time. But not here. Because those 30 days amplify the aromatic intensity and personality of Carpanè Corvina in a way no other technique can.
Then comes the fermentation: in 50-hl conical oak barrels for about 25 days. Slow, careful, and unhurried. The time necessary for the wine to develop complexity and balance.
The tasting (the real one)
First impression: that bold ruby red color in the glass. It's not a light red, it's a red that looks you straight in the eye and says, "I'm here."
The nose reveals aromas of flowers and berries —elegant yet intense, never banal. Then, when you taste it, you experience herbaceous sensations , spices , and that subtle note of bitter almond that characterizes and distinguishes this Corvina Veronese wine .
At 14.5% ABV, it's a substantial red. It's not a wine to "drink and go" while you chat absentmindedly. This demands attention, respect, and time. Uncork it at least two hours in advance, serve it at 18-20°C , and let it open. Layer after layer, it will reveal its most intense notes.
