Time Is Part of the Wine
The grapes are harvested by hand in the hills of Valpolicella Classica, selecting only the finest bunches at perfect ripeness.
Then begins the traditional appassimento process.
For months, the grapes rest in drying lofts where the fresh mountain air and the winds coming from Lake Garda slowly transform the fruit.
Water evaporates.
Aromas intensify.
Structure deepens.
After fermentation, the wine ages for more than two years in fine oak tonneaux.
No shortcuts.
No rush.
Just patience and craftsmanship.
Tasting Notes
Colour: deep garnet red.
Nose: sour cherry, ripe plum, sweet spices, cocoa and delicate vanilla notes.
Palate: rich, warm and velvety with extraordinary depth and an incredibly long finish.
